Chicken Penne Pasta

There’s a lot to love about fresh penne pasta bathed in tomato sauce. Add chicken and fresh mozzarella and you’ve got a meal that even the pickiest eaters can’t refuse. You can make this easy chicken penne recipe in under 30 minutes using pre-cooked chicken. Just give the chicken enough time to marinate in the sauce, then add your other ingredients. It’s a simple recipe, but it might just become a staple in your household.

Ingredients:

  • 12 ounces penne pasta
  • 1 jar Pasta Jay’s Tomato Basil Pasta Sauce
  • 4 cloves garlic pressed
  • 1/4 teaspoon red pepper flakes
  • 2 cups of cooked chicken, cubed
  • 1 1/2 cups mushrooms, sliced
  • 2 cups mozzarella cheese shredded
  • 1 tablespoon olive oil

Instructions:

Step 1: Start with your pasta. Boil water in pot or large skillet and cook pasta according to package directions. Drain and set aside.

Step 2: Using the same pan, heat the olive oil over medium heat. Add mushroom slices and let cook for about 5 minutes, or until the slices begin to brown.

Step 3: Add Pasta Jay’s Tomato Basil Sauce along with the pressed garlic and pepper flakes – heat over medium heat until bubbly and hot.

Step 4: Add the cooked chicken and let simmer until the chicken is heated through again, about 20 to 25 minutes. If you’re cooking fresh chicken see the the cooking note at the bottom.

Step 5: Stir in the pasta and mozzarella cheese. Taste for seasoning, add salt and/or pepper as needed.

Step 6: Serve hot, topping with Parmesan cheese. Enjoy!

Cooking Note: To start with raw chicken cook pasta as directed in step 1. Then add 1 tablespoon olive oil to the pan. Cut the chicken into bite sized pieces and season lightly with salt and pepper. Cook until brown on all sides and almost cooked through, about 8-10 minutes (depending on size of pieces). Remove the chicken and cover with foil, then follow steps 2 – 6.
