Pasta Jay’s restaurant opened in Boulder, Colorado in 1988. It quickly became an institution for flavor and Italian tradition in the city. Jay Elowsky opened the restaurant to feature his family’s recipes that were passed down for generations. The tradition of creating and sharing premium Italian meals began in 1861 with “Mama Genovese,” whose grandmother was the cook for Victor Emmanuel the Second, the first King of Italy.
